Note to self: need to refrigerate for 2 hours before eating!!
Equipment: food processor
Ingredients:
1 cup raw almonds or almond meal
1 cup dessicated or flaked coconut
2/3 cup dried cranberries/sulphur free dried apricots/dried figs/sultanas
1/3 cup pitted dates
extra coconut, cacao powder or cinnamon for dusting (optional)
Place all ingredients into food processor or Thermomix and process until almonds are finely chopped and mixture starts sticking together. Add a tablespoon of water if needed for consistency.
Scoop out tablespoon amounts and roll into balls.
Roll balls in additional coconut, cacao powder or cinnamon (optional).
Refrigerate for at least 2 hours before eating.
Alternative/additional ingredients:
1 tablespoon cacao powder plus a little water
nut-free version: use ground up
pumpkin seeds (pepitas) or sunflower seeds instead of almonds
1/2 teaspoon cinnamon or other spices to taste
